Meat Free Monday : Bell Pepper and Feta Omelette

INGREDIENTS

2 Eggs

1/4 cup milk of choice

1/2 bell pepper

30g feta cheese

Salt

Pepper

METHOD

Beat eggs and milk, season with salt and pepper

Heat a non-stick pan over medium heat

Pour egg mixture into pan and cook omelette

When the omelette is almost fully cooked, add bell pepper and feta to one side. Flip the other side of the omelette over.

Serve hot
